What is well-being to me? Everything I say, everything!

I previously wrote a post about my new healthy lifestyle circa 2014. It was my new year’s resolution and I can say I’ve stuck to it 90% of the time. The 10% that I haven’t has been down to going away on holiday and indulging and then slacking off a bit whenever I returned. But as the year draws to its end, I’m determined to cross the finish line with a smile on my face, A.K.A a toned physique and healthy regime.

Why this post? Well, since I’ve shown you my breakfast and dinner ideas already, I’ve decided to break it down a little and show you how to prepare one of my favourite breakfast.

You don’t have to be a chef, I promise. It’s quite simple, yet nutritious, healthy and very tasty! That’s what I’m about 🙂

 

AVOCADO

Cut into half, take out the pit, peel the outer covering and cut into desired shapes. It’s a good source of healthy fats.

 

VEGETARIAN SAUSAGES

I used the Linda McCartney brand and popped it in the oven for 25 minutes, turning occasionally. It’s a good source of protein.

 

KALE OMELETTE (USE SPINACH IF KALE ISN’T ACCESSIBLE)

I used 1 whole medium sized tomatoes, 1 bulb of onions, 2 pinch of sugar, a big handful of chopped kale, 2 teaspoon extra virgin olive oil, 2 eggs and seasoning like dried thyme, dried pepper and maggi for taste(i don’t use salt anymore whenever I use maggi because there’s salt in the cubes already). A good source of protein, vitamins & iron (Kale is very rich in irons)

> I chopped the tomatoes and onions and placed into a frying pan with the heated oil.

> I immediately add the seasoning and sugar. The sugar is to neutralise the acidity of the tomatoes.

> After about 3 minutes, I add the kale and mix it all together.

> I turn the heat down and allow the kale to get a bit tender otherwise it will remain very crunchy; and that wouldn’t be a good texture for the omelette.

> In a bowl, I beat the eggs and add a pinch of maggi.

> When the veggies are sauteed to your desired requirement(usually about 10 mins in total for me), add the eggs.

> Still on low heat, I leave it to set a bit then flip it to the other side.

> I continue to flip, turn and stir, so it becomes scrambled. It will most likely scatter by itself as you flip it over anyway.

> I don’t like my eggs runny, so i leave it till its done and switch of the gas.

> Viola! Ready to serve.

> Presentation makes the food all the more appetizing. So get a fancy china ware and dish the food!

> Try not to salivate as you take your plate to the dining table

> Eat as you please. If no one’s looking, lick your fork when you’re done. LOL
